What are Heavens to Betsy’s nutrition facts?

Each jar has 8 servings with a serving size of 33g.

Heavens to Betsy is more expensive than other fudge sauces. How come?

Unlike the vast majority of fudge sauces, most especially those found in local grocers, Heavens to Betsy is handcrafted in individual small batches and is free of chemical additives or preservatives.

Heavens to Betsy is only made with with the finest ingredients, including plenty of heavy cream, fresh butter and 99.99% pure Nacional cacao (some of the finest in the world). We could eliminate most of the butter and cream, like most fudge sauces, simplifying the production process, or use less expensive cacao from Africa or the Arabian Peninsula, but such choices would result in a much sweeter, less velvety sauce, a product similar to what’s already out there. We wanted to bring something to market that wasn’t available elsewhere and is better suited to a grown up palette.

Because we’re determined not to use chemical stabilizers, it is imperative that we precisely control the cooking process, by hand. It is the only way to achieve our flavor profiles and unique mouth feel, and to ensure the consistency of Heavens to Betsy from batch to batch.

How does Fortunato No. 4 make a difference?

You may already know this, but cacao is a fruit. It’s farmed like other fruits so it’s impacted by the local weather, topography, soils and other environmental factors. Thus, cacao from Peru is inherently distinct from that farmed in other regions across the globe.

What’s more,  Fortunato No. 4 — the only 99.99% pure Nacional cacao from Peru, which was thought to have been extinct until 2011 — is the exclusive source for the 68% dark chocolate we use in Heavens to Betsy. It possesses a decidedly distinct flavor profile, including citrus notes that impart character to our sauces that would be unattainable otherwise. We are extremely fortunate to partner with Fortunato, as we are one of only 5 companies in the US permitted to use their chocolate in our products.

But Fortunato has an impact that goes considerably further. They buy organically grown, pure Nacional cacao at an average of 10 times Fair Trade premiums from over 500 individual family farms in northern Peru. It’s a magnanimous commitment, driven by their goal of creating generational wealth for the local farmers, rather than solely their own financial rewards for building a global chocolate footprint.

How should I decide which flavors to try?

All of our products start with the same rich, dark, velvety base recipe — our Midnight dark hot fudge sauce. Then we add Italian espresso or other natural flavors to push the deep chocolate flavor into new yummy directions.

We find our Espresso to be the deepest flavor of the five we offer, perfect for the “I’m not a sweets eater” in the crowd. Orange is a bit like those gelled orange sticks covered in rich chocolate you might remember from your childhood. Although not sweet in the traditional sense, Almond is a classic, baked desserts treat. And, Cherry… well, hot fudge and cherry, need we say more?

We suggest you try them all. Of course we’d say that. But seriously… you won’t know what you’re missing if you don’t.

Do I need to refrigerate Heavens to Betsy?

Yes. Because we use cream and butter in our recipe, Heavens to Betsy must be refrigerated after opening.
